I love the fact that it's made of wood, surrounded by a garden and vegetable patch, and blends in perfectly with its surroundings... It's these multiple facets that I wanted to highlight through the different dishes I'll be offering this year, respecting nature and the rhythm of the seasons, of course." The plate is a blank canvas on which Pierre Chomet allows himself every combination and every bold move—without being provocative—all in the service of flavor.
